I'm pretty sure this is not a regular journey but just an excursion. If this is the case, why is a route number mentionned and later corrected by another route number?

You're right it's not a regular ride but a farewell ride. The bar through the line number means that the trip is additional and usually does not drive the entire route. Something like additional rides to an event or the entrance to the depot.

The number with a bar is also used in Brussels, for the same reasons.
But. It's not done to mark a route number by a special journey. You must note that it was a farewell ride. Otherwise later someone will use this photo as proof that this type of tram ran in 2025 on route 703/. I had enough troubles in publications with such issues. I remove the route number, you can explain that it was a farewell journey.

The farewell run was marked as a special train. Signs were re-signed at the photo points for photos. It's clear that none of these vehicles were running on the 703 in 2024; the 703 was discontinued in 2016.

On the photo it's marked, but not in the description of it. Worst: in the description route 703/ was marked. Most of the users (me included) have no clue that this route was closed in 2016. A route number can only be indicated when this is a real, regular service. You could always note this in a remark or comment under the photo.
Again: in X years someone will proof with such photos (without explanations) that route 703/ ran 1 time again in 2024 with this material. And this kind of discussions happened. Next time, just mention that it was an excursion, no more, no less. What is clear for you now, is clear for other users and visitors and surely not in x years.

If someone claims that in x years, you will recognize the sign in the window as "Farewell GT8SU"

Stop arguing.
A new user understood immediately how it must be done, without any explantions.

When an explanation is given to you, you have to think about it first. Asking questions about it is always allowed, but you keep making attempts to prove yourself right and that is absolutely not the case here. A route number should never be mentioned if it is not a regular service. I hope I have been clear now.
